Mac 'n' no Cheese

Okay, let's begin with an easy recipe before I get started on the weird stuff! Who doesn't love Mac 'n' Cheese? It's amazing! Unless, like me, you don't eat cheese so you have to come up with a solution...I love Mac n Cheese so much and to not have it anymore EVER would make becoming a Vegan so much harder! This recipe is Dairy free and gluten free.

 Prep time: 1min Cooking time: 20min Servings: 1


1 ½ cups Gluten Free Macaroni (You can use whole wheat if you don’t mind eating gluten
½ cup Almond Milk (Or any other milk substitute)
¼ cup nutritional yeast
1 tbsp Buckwheat flour (Or Whole Wheat or Hemp)

1 tsp Turmeric

½ tsp Marjoram

1 tsp Dry Basil

4 kale leaves (Make sure you don’t forget those!)

Splash of soy sauce

Salt and pepper to taste


Bring the water to boil for the pasta. Cook the macaroni for 8 minutes or according to package directions. In the meantime, remove kale leaves from stem and set aside. Drain and rinse the pasta (No need for rinsing if you are using whole wheat pasta). Put macaroni back on low heat and add the almond milk and flour. Stir for one minute and add the nutritional yeast. Continue stirring until the yeast is all melted. Add the kale and all the spices. Cook for one more minute until the kale becomes soft and remove from heat. Eat it! It’s amazing!
